Carrot and Parsnip Soup- Full recipe below!! This is one of my all time favourite soups and a brilliant one to get made up in advance and in the freezer. I like to serve this as a starter on Christmas day with a little dried sage and a splash of cream. Ingredients: 800g parsnips 400f carrots 1 tbsp olive oil 2 tsp dried sage 1 tbsp runny honey 2 tsp chopped garlic 1 cup (115g) frozen diced onions 1.5 litres vegetable stock splash of double cream salt and pepper Method: 1. Have you got leftover veggies from Christmas looking a bit sad and not sure what to do with them? Don't bin them- make soup!! Here i've got leftover roast carrots, parsnips and a few brussel sprouts. Just add to a saucepan, cover with stock, bring to the boil and blend with veggie stock until smooth! Easy as that- another easy lunch and no Christmas waste woop!! This soup can also be frozen for another time, just pour into a container and freeze ready to grab out when you need a quick easy lunch
